Molasses
Molasses weighs 340g per cup and comes in light, dark, and blackstrap varieties. Light molasses is mildest, from the first boiling of sugarcane. Dark molasses is thicker and less sweet. Blackstrap is very bitter and not recommended for baking. When measuring, oil your cup first so the molasses slides out cleanly. Molasses is acidic and reacts with baking soda for leavening. Store at room temperature for up to a year after opening.
