Matcha
Matcha weighs only 64g per cup because it is an extremely fine powder. You will almost never use a full cup — typical amounts are 1-2 teaspoons for lattes and 1-2 tablespoons for baked goods. Always sift matcha before using, as it clumps heavily. Culinary-grade matcha is fine for baking and lattes. Ceremonial-grade is meant for traditional tea preparation. Matcha loses its color and flavor within a few months of opening. Store in an airtight, opaque container in the refrigerator.
