Banana (mashed)
Mashed banana weighs 225g per cup — heavier than applesauce (245g) is surprisingly false; banana actually packs less densely because of air whipped in by mashing. Two medium bananas yield about 1 cup mashed. The riper the banana (black-spotted is ideal), the sweeter and more flavorful. Substitutes for ½ cup butter or oil 1:1 in muffins and quick breads, or replaces 1 egg with ¼ cup mashed banana. Freeze peeled overripe bananas in a bag for easy stash.
