Barley Malt Syrup
Barley malt syrup weighs 320g per cup — same density as honey and molasses. Made from sprouted barley, it has a distinctive malty flavor essential to traditional bagels and pretzels (where 1 tablespoon goes into the boiling water). Less sweet than honey (about 60% as sweet) and lower glycemic. Substitutes for molasses 1:1 in recipes that want maltiness instead of bitterness. Crystallizes slowly; warm gently to pour cleanly.
