Cooked lentils weigh 200g per cup. Dried lentils: 1 cup dried yields about 2½ cups cooked, no soaking required (unlike beans). Cook times vary: red/yellow split lentils 10-15 minutes (they break down), green or brown 20-25 minutes (hold shape), French du Puy 25-30 minutes (firmest). Use du Puy for salads, brown for soups, red for dal. Add salt only after they're tender — salting earlier toughens the skins.
