Ghee
Ghee weighs 224g per cup. It is clarified butter with the milk solids removed, giving it a higher smoke point (around 450 degrees Fahrenheit) and a rich, nutty flavor. Because the milk solids are removed, ghee is often tolerated by people with dairy sensitivities. It can replace butter 1:1 in most recipes, though the lack of water changes how doughs and pastries behave. Ghee does not need refrigeration and stays good for months at room temperature in a sealed jar.
