Frozen corn kernels weigh 165g per cup — about the same as fresh corn shucked from one large ear. Frozen at peak ripeness, it's often sweeter than off-season fresh corn. Add directly to hot pans without thawing — they steam through in 2-3 minutes and the residual ice prevents burning. For corn salads, blanch frozen kernels in boiling water for 1 minute then shock in ice water to refresh the texture. Substitutes for fresh corn 1:1 in chowders, fritters, and salsas.
