Einkorn Flour
Einkorn flour weighs 110g per cup. The oldest cultivated wheat species (about 10,000 years older than modern wheat), with a buttery, slightly nutty flavor. Lower in gluten than modern wheat — doughs are stickier and rise less, so don't over-knead. Best in pancakes, cookies, and quick breads where extreme rise isn't needed. Substitute up to 50% of all-purpose flour without major recipe changes. Often easier to digest for those sensitive to modern wheat (though not gluten-free).
