Cassava Flour
Cassava flour weighs 140g per cup. Made from the whole cassava root (unlike tapioca flour which uses only the starch), it works as a 1:1 substitute for wheat flour in most recipes — the closest gluten-free flour to wheat in behavior. Slightly heavier per cup than AP flour, so for very precise baking reduce by 10-15%. Naturally grain-free, nut-free, and allergen-friendly. Store airtight to prevent clumping.
