Canola oil weighs 218g per cup — same as most refined neutral oils. Pressed from rapeseed (a Brassica relative of broccoli), it has a high smoke point (~204°C / 400°F) and almost no flavor, making it the default North American baking and frying oil. Lower saturated fat than most oils. Substitute 1:1 for vegetable oil, sunflower oil, or melted butter (use 25% more oil than butter to match fat content).
