Supermarket balsamics are typically wine vinegar with caramel coloring; true Aceto Balsamico Tradizionale is aged 12-25+ years and reduces 1 tablespoon to a syrup. For dressings, whisk 1 part balsamic with 3 parts olive oil. Reduce to half over low heat for a glaze on roasted vegetables, strawberries, or grilled meats.
