Avocado Oil
Avocado oil weighs 218g per cup, the same as most neutral cooking oils. It has a very high smoke point (around 520 degrees Fahrenheit), making it excellent for high-heat cooking, searing, and roasting. Refined avocado oil has a neutral flavor. Unrefined has a mild, buttery avocado taste. It can substitute 1:1 for any neutral oil in baking. Store in a cool, dark place. Once opened, use within six months as it can go rancid.
