Almond Paste
Almond paste weighs 245g per cup. About 50% blanched ground almonds and 50% sugar, with a coarser texture and less sweetness than marzipan (which is 25-33% almonds, 67-75% sugar). The traditional filling for stollen, frangipane tarts, and Italian biscotti like ricciarelli. Soften by warming briefly in the microwave (10 seconds) or kneading by hand before incorporating. Tightly wrapped, it keeps months in the refrigerator without drying out.
