Almond Milk
Unsweetened almond milk weighs 240g per cup — essentially the same as water since it's mostly water with about 2% almonds. Sweetened versions add 1-2g per cup. Substitutes 1:1 for dairy milk in most baking, though the lower protein and fat mean cakes and pancakes can be slightly less tender. Won't whip or steam to silky microfoam like dairy. Shake before pouring — separation is normal.
